Vegan wok with Yamani rice!

Today I’m going to share with you one of my favorite vegan recipes of all time! I discovered this one recently and I can’t stop cooking it! It is pretty simple to make but you have to constantly keep an eye on it.

Let’s get to it!

What we need:
– 1 1/2 cups of Yamani Rice
– 1 red pepper
– 3 round zucchini
– 2 carrots
– a handful of soybeans sprouts
– 1 cup of sliced scallions
– salt and pepper
– sesame seeds
–  sesame and sunflower oil
– soy sauce

First, we are going to julienne everything except the IMG_20170319_155333233scallions and the soybeans sprouts. We can do that while we cook the Yamani Rice because it takes a long time to cook!
Then we are going to add 2 tablespoons of sunflower oil, the sliced carrots and the sliced red pepper. We are going to turn up the flame to medium, we don’t want to burn anything but we also don’t want this wok to take ages to cook! Once everything is cooked, we add the round zucchinis and the sliced scallions.

IMG_20170319_160415598We let that cook for a while, let’s say 5 to 7 minutes (we have to mix everything while it’s being cooked). And then we add a little bit of the sesame oil and as much sesame seeds, salt and pepper as we want.

Once everything is mixed and you can see the zucchinis have softened a little bit, we add the pre-cooked Yamani Rice. And again, let’s mix it!

After 2 minutes we add de soy sauce: you can add as much as you want but keep in mind that soy sauce has a lot of sodium in it, so if you added a lot of salt, don’t go heavy with this one (unless is low sodium soy sauce).

Again, don’t forget to mix everything! I believe the perfect blend of the ingredients it’s the key for an amazing wok!

Last, but not least, we are going to add the soybean sprouts and we are going to mix it one last time! We leave everything cooking for about 5 minutes et voilà!

 

So here it is! I’ve been obsessing over this lately. If you want, you can add curry and cumin. It tastes SO good. And you can add broccoli, too. I’ve been trying some alternatives to this dish and it just keeps getting better.
