Hello everybody! Today I’m bringing you the recipe to my favorite healthy vegan meal. I’m not a vegan myself, but I do recognise that eating vegan from time to time it’s good for your health and the enviroment. And besides, this meal is delicious. I’m not kidding, it’s probably my favorite meal ever.
It’s super healthy, fresh, good for any time of the year, it will make you feel full after eating it AND it’s really easy to cook!
What is it? It’s Guacamole and Rice.
What do you need? You will need one tomatoe, 1 cup of yamani rice, one avocado, lemon juice (it’s better if it’s fresh), salt and pepper.
How do you cook it? It easy!
First you boil the rice for half an hour, once it’s done you let it cool for a while. While the rice is cooling, you can start with the avocado. First you want to smash the avocado.
Then you want to add the lemon juice (in my case I use half a lemon) and then you want to chop the tomatoe and add it to the mix. Now it’s your turn to spice it up the way you like it (I use salt and pepper). Use as much as you like but remember, the lemon juice makes everything taste stronger. Be sure to check from time to time so you don’t go overboard with the salt.
And last but not least we add the yamani rice (it should be cold or warm -Do not add it if it’s hot, let it cool a little bit more!) and mix everything together.
And that’s it! You can add chopped onion if you want. Since I’m not an onion fan I didn’t add it, but you’re free to try it. I hope you try this recipe and I hope you love it as much as I do! Let me know if you cook this and tell me what you think! See you next time… bye!
